Ingredients

  • 1 3/4 cup of flour
  • 1 1/2 tsp of butter
  • 1/4 cup of water
  • 1 egg
  • 1/4 teaspoon of salt
  • 1/3 cup of milk
  • 1 tsp of yeast
  • 2 tsp of sugar
  • Semolina or flour

How To Make The English Muffins

To make the starter, mix the water, yeast, 1 tablespoon of sugar and 1 tablespoon of flour in the stand mixer bowl and mix well, let it rest for about 10 to 15 minutes, the starter needs to have a few bubbles on the top.

How To Make The English Muffins Dough

1 – Add the following ingredients to the stand mixer bowl: flour, butter, egg, sugar and milk.

2 – Mix the dough together. With the dough hook in the stand mixer, start to knead the dough in slow speed, let the dough be formed and check if the dough needs a little of more liquid, if so, add spoon of more milk at a time.

Knead the dough for about 2 or 3 minutes and add the salt. Keep kneading the dough for about 8 to 10 minutes, the dough needs to be soft and not sticky.

3 – Let the dough rise covered with a kitchen towel for 1 hour.

4 – Cut the muffins. Turn the risen dough on a lightly floured work surface, and with your hands push lightly the dough down, dough should be 1/2 inch thick. This step can be also done with a rolling pin.

Cut the English Muffins with a cookie cutter 3 inches wide, make the first cut, and get all the dough left together and knead the dough very gently to make one dough ball, press the dough again lightly on a floured surface and cut the second batch of muffins, with the remaining dough, make one small dough ball with it, and flat it lightly.

5 – Let the muffins to raise for the second time, covered with a kitchen towel for about 30 minutes

6 – Cook the muffins 5 minutes each side on a hot skillet. The skillet should be warmer on medium to medium to low heat before.

Let the muffins to be cooked on one side for about 5 minutes, then flip the muffins with a spatula, the muffins should be flipped when one side is brown, cook the second side for about 5 minutes or when the second side is also brown.

7 – Let the muffins to cool off on a cooling rack for about 10 minutes.

8 – Slit the muffins with a fork or with a knife for cutting bread, and serve!

Can The English Muffins Recipe Be Prepared The Day Before?

Yes, this recipe can be prepared the evening before and keep the dough in the fridge in a bowl with a plastic lid. Take out of the fridge the dough next morning and let it warm up to room temperature for about 30 minutes before cutting the muffins.

Can The English Muffins Be Frozen?

If you want to make a bigger batch of English Muffins, you can freeze the muffins in plastic bags, and take the muffins you need at a time from the freezer, and let them warm up at room temperature, after you can slice the muffin and toast them in the toaster.
