As this recipe is made with yeast, always start making the starter, let it raise until you see the bubbles that will let you know the yeast is working, this will deliver the best taste to your homemade bread.

Make The Starter

When you make a yeast bread recipe, most of the recipes start with a starter, this is how I make mine:

  • 1 tsp of dry yeast
  • 1/2 tea spoon of sugar
  • 3 tsp of flour
  • 1/4 cup of warm water

Mix well all dry ingredients and add the water, mix well with a spoon and cover with a kitchen towel, allow the yeast to work well, from 10 to 15 minutes.

It can be covered with plastic wrap also, but I try to avoid all use of plastics, the kitchen towel will cover well the starter.

Ingredients

  • 2 cups of flour
  • 1/2 icing sugar
  • 1 egg
  • 1/2 cup of milk
  • 50 gr butter
  • 1 pinch of salt
  • Starter

For the egg wash

  • 1 egg yolk
  • 1 tsp of milk

How To Make The Basic Sweet Milk Buns

1 Prepare All Your Ingredients

When making any bread dough, a good tip is to prepare all your ingredients in advance, this way you can be sure you have all your ingredients ready.

On the image below, you can see the starter in the bowl, made 15 minutes in advance.

2 Mix All Dry Ingredients

Mix all dry ingredients in the stand mixer bowl, except the salt, with the knead hook, start mixing and add the egg and half of the milk.

Pay attention on how the dough starts to form, add more milk when it is needed, little by little, this way, you’ll be adding the amount of milk that is necessary to make a soft dough, keep kneading your dough for about 2 to 3 minutes.

Add the pinch of salt and keep kneading the dough for about 5 more minutes.

3 Add The Butter To The Sweet Milk Buns Dough

Cut the butter in small pieces and add the butter to the dough, keep kneading the dough until you see the butter is well added to the dough.

Keep kneading the dough for about 5 to 8 minutes.

4 Let The Sweet Milk Buns Dough Raise

When the dough is well kneaded, take off all the dough from the kneading hook, and form a dough ball with your hands, it should be soft and not sticky.

Place the dough ball in the ball, (no flour or oil on the bowl) and cover the bowl with a clean kitchen towel.

Let the dough raise for one hour.

5 Make The Sweet Milk Buns

Take the dough on a lightly floured surface and divide the dough into 8 to 9 portions, roll each dough portion to make the buns.

Place the buns on a pan covered with parchment paper.

Cover the buns with the kitchen towel you used to cover the bowl before, let the buns proof for one hour.

6 Prepare The Egg Wash

Preheat the oven to 380 F degrees.

In a small container or bowl, prepare the egg wash by mixing together the egg yolk with a small amount of milk, with a kitchen brush, paint the top of each bun.

This step should be made when the oven is already heated, and the buns are ready to go into the oven.

5 Bake The Sweet Milk Buns

Bake the Sweet Milk Buns in a preheated oven for 10 minutes.

The baking time might be different in each oven, you need to check on how your buns are doing while they stay in the oven, if you notice the buns are getting the top golden too fast, it’s always better to check if they are ready, then when done wait for the 10 minutes.

If your oven is slow, check the buns, and it might need a longer baking time.

6 Let The Sweet Milk Buns Cool Off

Let the sweet milk buns to cool off completely and enjoy!

This time as is Summer, we got some freshly picked raspberries from our garden, we served the sweet milk buns with whipped cream and raspberries.

Yes, if you don’t have a stand mixer at home, or if you prefer to make the yeast dough by hand, this recipe can be made by hand, just follow the same steps to make the dough, and make the dough on any surface in your kitchen. Follow the same steps to let the dough raise and make the buns, let the buns proof and bake the buns.

Can The Sweet Milk Buns Be Frozen?

Yes, you can storage these buns in your freezer, just let the buns to cool off completely and then put the buns in a freezing bag and write the date, you can keep the buns frozen up to 3 months.

When taking the buns out of the freezer, let them rest in a room temperature until they are soft again, then you can slice them and toast.

Can The Sweet Milk Buns Be Made With A Topping?

You can use some white sugar to make a sweet topping, this will add some sweetness to the buns, but you can use also some sesame or poppy seeds for topping these buns.

Other Notes:

Get ready all your ingredients before you start making the dough, this will assure you have everything in your kitchen.

Preheat the oven to the baking required temperature

To test for doneness, you can touch a bun and it should sound hollow and the bottom should be brown, you can also test it by inserting a stick and it should come out clean and dry.

Let the buns cool off completely before you have them.

Always let the bread to cool off completely before you wrap it and storage it.
