  • 3/4 cup of Water
  • 1 pinch of Salt

How To Make The Poolish For The Artisan Bread Recipe

Some bakers will mix all the ingredients without the need of making the poolish, I will suggest not to skip this step, as it adds more flavor and texture to your loaf of bread.

Mix in one small bowl:

  • 1 tablespoon of yeast
  • 1/2 tablepoon of sugar
  • 1/4 cup of water (room temperature)

Stir well all the ingredients, cover the bowl with a clean kitchen towel and let it rest until it has small bobbles.

Add the flour and the poolish in the Stand Mixer bowl and start kneading the dough with the kneading hook, add little by little the rest of the water, knead the dough for about 5 minutes and then add the salt, keep kneading the dough until it forms a soft, non sticky ball.

Once it’s shaped, put some flour on the top and place the bread on a baking tin with parchment paper, cover the bread with a clean kitchen towel and let it proof until it doubles its size or one hour.

How To Bake The Artisan Bread

Pre-heat your oven to 450 F or 230 C

When the oven is ready, uncover the bread and with a sharp knife, score the loaf 3 slashes.

To get a crispier crust on your bread, you can place in the lower rack, a cast iron pan with 3 to 4 cups of boiling water in it, this step will add some steam to the oven and it will create a crispier crust. This step is optional.

Place the scored dough on the center rack in the oven and bake it for 25 minutes, or until your bread has a golden crust, you need to tap gently the loaf (loaves) and it should sound hollow, then your bread is ready.

Take your bread out of the oven and let it cool off for at least 15 minutes, it will be better if you wait longer to cut your bread.
