Making Pizza With Focaccia Bread
1 How To Make Focaccia Dough
On this tutorial you will find the steps to follow to make the Focaccia Dough, on this tutorial you will see on the images I made two pizzas with different toppings, the focaccia dough will be good to make one large pizza or one medium and one small.
Follow the steps to make the focaccia dough and let it raise for the first time for one hour, then punch the dough, and let it raise for the second time for about 30 minutes, this will add more flavor to the dough.
2 How To Shape The Focaccia
Cut the dough on two portions, one bigger than the other.
This time I used the cast-iron pan to make the pizza, and parchment paper.
Put some drops of olive oil in the cast-iron pan and place a parchment paper over the oil, this will keep the parchment paper from moving while you work with the foaccia dough.
Put one tablespoon of olive oil over the parchment paper and use a kitchen small brush to brush the oil on the paper, put the facaccia dough on the paper and with your two hands, punch gently on the dough to make it big as the cast-iron pan.
Cover the iron-cast pan with a clean kitchen towel and let the dough to proof for 30 minutes.
3 How To Make The Focaccia Pizza
When the dough has proof for 30 minutes, take off the kitchen towel and add the cool tomato sauce on top of the focaccia dough, spread it with the help of a wooden kitchen spoon, don’t push the dough.
Spread over the tomato sauce, add some cheese, and add the pepperoni, cover the pepperoni with enough pizza cheese.
4 How To Bake The Focaccia Pizza
Preheat the oven to 410 F, the oven should be hot when you start preparing the pizza (step 3).
When the pizza is ready with all the toppings, it should go into the hot oven for 14 minutes.
Note: You need to check the baking time in your oven, not all ovens work the same.
When the pizza is ready, take the focaccia pizza out of the oven, and let it cool off for about 5 to 8 minutes before eating, as the cast-iron pan can keep food hot for a longer time.
Another good idea is to take the focaccia pizza on a wood board or on a plate, and let it cool off for 5 minutes before having it.
Note: If there are any kids at home while you’re making the focaccia pizza, always keep the hot cast-iron pans far from kids so they cannot reach it, and always keep a kitchen towel on the handle to prevent anyone that touches the handle to get burned.
Let the cast-iron pan cool off out of reach from anyone before washing it.
How To Make Focaccia Caramelized Onion Topping?
To make a focaccia with caramelized onion topping, you will need to cut one big onion or two small onions in slices, fry the onion slices on a frying pan with 1/2 tablespoon of olive oil and 1 tablespoon of butter on low to medium heat.
Stir the onions frequently with a wooden spoon and a pinch of salt and some pepper, cook the onions until they start getting soft and some color.
Let the onions to cool off completely.
Prepare the focaccia as the instructions above to point 3.
Add some shredded cheese on top of the foaccia first, then add the caramelized onions on top, and cover the onions with some more shredded cheese.
Note: While the focaccia is baked in the oven, the onions will get more color and more flavor, that is the reason why you should stop cooking the onions on the stove as soon as they get soft and with some color.
Bake the Focaccia with the caramelized onions topping in a hot oven for 14 minutes.
Check on the focaccia often while is in the oven, don’t forget ovens might work differently from home to home.
